What’s the hottest pepper and how do they measure that?

There is a kind of chemical compound called capsaicin that burns your lips and tongues.

In 1912, Wilbur Scoville developed a method to measure capsaicin. In this test , a solution of the pepper extract was diluted in sugar water until the spiciness was no longer detectable to taster. Experts say habanero is the hottest pepper .

For the past few decades , this method was considered outdated and inexact. The new techniques are calibrated to his scale, measuring in Scoville units.

If you eat hot peppers, just grab a cold glass of milk. The fat in milk will break the fiery down.
